To hire staff and stuff, where might I get the NDA for them to sign and everything I need in order to hire, pay staff in various jobs in the company?

I'd recommend you meet with a lawyer to get legal documents tailored for your specific needs

You need to sit down with a local accountant who can walk you through what is required to hire someone. The requirements can vary quite a bit depending on your location, but here are a few things to consider:

  • Workers Compensation Insurance
  • Unemployment Insurance
  • Witholding Requirements (FICA + state requirements assuming you're in the US)
  • Payroll Services
  • Medical/Dental Insurance
  • Retirement Accounts

An NDA should be the least of your concerns.
